The Weber 721001 Smokey Mountain cooker is the successor to the Weber Smokey Mountain 2820 and has a number of subtle improvements, you can use the smoker to cook turkey, ham, fish or vegetables with the use of either charcoal or wood. In truth there was never a great deal to improve as the 2820 is still a great smoker, if you need to replace your Smokey Mountain or have never tried one of the Smokers then the new model is the best choice due to the new features.
If you ever cook ribs in the Smokey Mountain you’ll never want to go back to making them using traditional means as it gives results just as good as a grill restaurant, after your ribs are cooked you can make out a pink smoke ring in the meat and they taste absolutely fantastic.
The first improvement in the new model of the Weber smoker is its fuel door that is wider than the one found on its predecessor, you can load charcoal and wood into the smoker much more easily due to the size of the door and the door-knob used on the previous model has been replaced with a more practical spring loaded latch.
The addition of a thermometer is also a significant improvement not found on the old smoker so you can determine its temperature much more easily, the previous Smokey Mountain also had no catch pan for the ash from fuel so you had to take more care while emptying it.
That pretty much covers the improvements found in the Smoker and in terms of performance they are virtually the same, like the old model the smokers lid and water pan are porcelain enamelled, the thermometer is placed conveniently in the center of the lid. The Smokey Mountain has the capacity to accommodate a reasonable amount of food so if you need to cook two whole chickens at once you’ll have no problems.
If you enjoy slow cooking and smoking your likely to enjoy experimenting with the Smokey Mountain due to its simple design and the fact that you can cook with it using a variety of fuels, keeping the door closed while you’re cooking with the smoker brings the best results and flavor so try to avoid the temptation of opening it. If you like marinating your meat then the Smokey Mountain is the smoker to cook it in, if you’re not an expert at smoking food you can use a Smokey Mountain, a bit of practice and a few recipes to become proficient in next to no time.
